Lemon Yogurt Bread

3 cups whole wheat or all purpose flour

1 teaspoon salt

1 teaspoon baking soda

1/2 teaspoon baking powder

3 eggs

1 cup vegetable oil

1.5 cups sugar

2 cups lemon yogurt

1 tablespoon lemon extract

Preheat the oven to 325′.  Lightly flour 2 loaf pans.  Sift dry ingredients together, set aside.  Beat eggs, oil and sugar.  Add the yogurt and extract.  Mix in the dry ingredients.  Pour batter into 2 loaf pans.  Bake at 325′ for one hour or until a toothpick inserted in the center comes clean.  Enjoy!

    Hi Shannon,

    I tried your Lemon Yogurt bread today and it was FAB! Thanks for sharing the recipe. I thought since I borrowed, I would share a recipe as well – one of our family favorites, Poppy Seed Bread. It makes a three loaves, makes a great gift and freezes well too. And it’s a complete crowd-pleaser! Here is the recipe:

    Poppy Seed Bread
    3 cups flour
    1.5 tsp baking powder
    2.25 cups sugar
    1.5 tsp almond flavoring
    1.5 tsp butter flavoring
    1.5 tsp vanilla extract
    3 eggs
    1.5 cups milk
    1 1/8 cup vegetable oil
    1.5 TBSP poppy seeds

    Mix all ingredients for 1-2 minutes with mixer. Pour in 3 regular sized loaf pans. Bake 1 hour at 350 degrees. Cool 5 minutes and pour glaze over loaves while still in the pans. Let stand 5 more minutes. Remove from pans.

    Glaze:
    1/4 cup orange juice
    3/4 cup sugar
    1/2 tsp almond flavoring
    1/2 tsp butter flavoring
    1/2 tsp vanilla extract

    Heat until all sugar dissolves and glaze is bubbling.
