Chicken Marsala: Quick and Easy Dinner, my go to meal….

What is your go to meal?  Leave your recipe in the comments section below and we’ll all have a great list of easy meals!  Here is mine:

INGREDIENTS

1/4  cup flour

1/2  teaspoon salt

pepper to taste

4 boneless skinless chicken breasts

1 Tablespoon olive oil

1 Tablespoons margarine or butter

1/2-1 bottle marsala cooking wine (available near the olive oil)

DIRECTIONS

Combine flour, salt and pepper in a ziplock bag.  Add chicken to the bag and coat it in the flour mixture.  In a skillet, heat the oil and butter until hot and foamy.  Saute chicken over medium heat until golden brown on both sides.  Stir in wine.  Simmer, covered  until chicken is no longer pink when cut in the thickest part (about 10 minutes).  Remove chicken to platter and keep warm.  Boil the remaining liquid in the skillet, scraping skillet to loosen until liquid is reduced to about 1/2 of a cup.  Pour over the chicken and serve immediately.

We eat our with rice, couscous or noodles.. YUMM-E

    My easy Tator Tot Casserole…
    Fry 1 1/2 lb of any meat (I mix deermeat & Jimmy Dean sausage. Ground turkey or hamburger works great too.) and then saute 1/2 an onion.
    Put meat and onion mixture in bottom of a 9×12.
    Cover with a can of mushroom soup.
    Add a layer of veges. I use 1 to 2 cups of frozen peas. (Also good is a can of green beans or corn.)
    Next, add a cup of shredded cheddar.
    Top with a bag of tator tots.
    Bake at 375 for 30 min covered, and then 10 min. uncovered with some American cheese slices on top for extra yumminess!

      Thanks EM, this sounds yummy… Although I have no “deer meat” handy so I’ll have to use turkey!
