Security Breach…

I appreciate the added security websites have these days.  It makes paying bills, ordering items online and engaging in social media seems a bit more safe…  I have a COMPLAINT, however…

THE STORY:  

On Sunday, 1/20/13 my I was driving my children home from a fun morning on the mountain.  My middle son (6 year old-Shaeffer) was handling my cell phone in the back seat of the car while I carefully drove us all home :).  Shaeffer is notorious for his curiosity.  He will be an engineer some day.  To make my long story a bit shorter I will not bore you with all the details, but basically somehow he logged me out/I got kicked out of facebook and he was of course pushing buttons and entered my password incorrectly several times.  Facebook doesn’t like this, I GUESS…  When I was home and comfy on my couch it directed me to a few security questions and a prompt to change my password.  I went ahead and did this.  Facebook sent me a generic, clearly automated email saying my password had been changed and I needed to verify.  Of course I did this and thought everything would be dandy.  NOPE…  I was locked out of my account…  Exactly 24 hours later I received another email from facebook asking me to log into my account.  I did and this is the message I received:

I debated and researched, not sure if I was being scammed, and decided to participate in confirming my identity.  That was on Monday…  It’s Thursday and I still do not have access to my account nor do I have any information on when I might actually have access to my account again.  YOU DO, however- You can see my account, post on my wall, check out my pictures, etc.. but I cannot…  I can’t even access my account to delete it.  I can’t remove my pictures.  I can’t see your friendly comments…  FACEBOOK IS MORE SECURE THAN MY BANK, I’M SURE OF IT!

I’m actually fine with being locked out, I don’t need it that much, but it does bother me that everyone else can see my account and I can’t (unless I look through my husband’s account).  It bothers me that there is no way for me to contact facebook with out getting an automated response.  They don’t take phone calls.  When you email them the response is automatic…  I just think it’s poor customer service…  For such a large and successful company you would think they’d be more kind, friendly and helpful..  GUESS NOT 😦

I’m not boycotting Facebook- I like Facebook… I just think it’s silly that my 6 year old created such a security breach that we have now been locked out for going on 6 days…  yet I see inappropriate things posted on people’s walls (spam) all the time…  seems crazy!

February Love Jobs

For the first 14 days of February our family reaches out to others to show our love.  We call these acts of service/giving “Love Jobs” and we keep our love jobs in our “Love Jar”…  We’d love for you to join us in spreading love this February, here is the scoop:

THE LOVE JAR

1.  We took a small mason jar and decorated it with heart stickers, bows etc.. to make it all “cute”.

2.  As a family we brainstormed some ways that we could love others this month.  I’ve attached our list, but please go ahead and brainstorm your own “love jobs”.

3.  I typed up our love jobs and printed them out.  We then cut them into strips and put them inside our love jar.

4.  Every morning, starting on February 1st and ending on February 14th, we pick one strip of paper out of the jar and perform that act of kindness that day.

5.   Some of our jobs include bringing cookies to a neighbor, donating toys to a local shelter, writing notes to grandparents, bringing treats to our teachers, etc..  I’ve attached our list below, feel free to adapt it to your family!

  1. Make a list of three people you’d like to pray for this week.
  2. Find one toy of your own that you would like to donate to a child in need.
  3. Fill a grocery bag with food items from your pantry and deliver it to a local food shelf.
  4. Bring a special treat to your teacher and tell her you appreciate her.
  5. Take cookies to a neighbor!
  6. Help make a meal for some friends.  Invite them over to enjoy it or drop it off at their house.
  7. Draw a picture for your grandparents and mail it to them today!
  8. Take some money out of your piggy bank and put it in an envelop to take to church for the offering.
  9. Call a friend and tell them how special they are to you.
  10. 10.   Draw pictures for the neighbors and leave them on their doorstep with a few special candy treats.
  11. Help Mom and Dad with a cleaning project around the house today.
  12. Fill a bag with new school supplies and drop them off at a local school for students who may have run out.
  13.  Make a special lunch for your brother or sister to take to school.
  14.  Buy flowers at the store and give them to a stranger.

I’m on a RISOTTO kick :)

I’m on a Risotto kick.  I think it began when I got a new cookbook for Christmas.

I love this new cookbook…  I actually always love new cookbooks- especially for the first few months of owning them :).  This cookbook has a few different Risotto recipes in it.  What I learned after making Risotto for the first and now second time is that the “KEY” to a good creamy Risotto is to add the broth slowly as you cook it.  This gradual addition of liquid is key to getting the rice to release its starch and create its own delicious sauce, so don’t rush this step. Ideally, you want to use just enough broth to cook the rice and no more.  One thing is crucial for a good risotto: have everything ready before you step up to the stove.   Don’t be afraid to make it, it really is not that hard if you follow the directions :).

The first one we tried was the “Fall Vegetable Risotto with Blue Cheese”  It was AWESOME… I’ve included the recipe below…  After learning how to make Risotto I made it a second time just adding ingredients we had around the house.  I followed the same Risotto directions that are listed here.  Prior to making the Risotto, however, I did sauté some shrimp in garlic & butter.  I set it aside while I made the Risotto using onion, baby bella mushrooms, and scallions.  When the risotto was just about finished I added some fresh spinach, the shrimp, and a bit of parmesan cheese.  YUMMY!

Williams Sonoma’s Fall Vegetable Risotto with Blue Cheese

 

5 cups (40 fl. oz./1.25 l.) low-sodium chicken or vegetable broth (I used Organic Vegetable Broth by Simply Organic)

10 oz. (315 g.) Brussels sprouts, ends trimmed, quartered lengthwise

2 Tbs. olive oil

1 large onion, finely chopped

1/4 lb. (125 g.) shiitake mushrooms, stems removed, sliced

Coarse kosher salt and freshly ground pepper

1 1/2 cups (10 1/2 oz./330 g.) arborio rice

1/2 cup (4 fl. oz./125 ml.) dry white wine

1/2 cup (3 oz./90 g.) gorgonzola or other blue cheese, crumbled

In a saucepan, bring the broth to a boil. Add the Brussels sprouts and cook until bright green and almost tender, about 4 minutes. Using a slotted spoon, transfer the Brussels sprouts to a bowl and set aside. Reduce the heat to low.

In a heavy medium saucepan over medium-high heat, warm the oil. Add the onion and saute until golden brown, about 5 minutes. Add the mushrooms, sprinkle with salt and pepper, reduce the heat to medium, and cook, stirring frequently, until they begin to soften, about 3 minutes. Add the rice and stir until opaque, about 1 minute. Add the wine and stir until absorbed. Add about 3/4 cup (6 fl. oz./180 ml.) of the broth, and adjust the heat so the liquid bubbles and is absorbed slowly. Cook, stirring frequently, until the liquid is absorbed. Continue cooking, add the liquid about 3/4 cup at a time and stirring frequently, until the rice is just tender but slightly firm in the center and the mixture is creamy, about 20 minutes. Mix in the Brussels sprouts, blue cheese and a generous amount of pepper. Taste and adjust the seasoning.

Spoon the risotto into warmed shallow bowls or plates, and serve right away. Serves 4.

Valentine Bird Feeders

We made these last year for neighbor gifts.  There are several reasons I love these as gifts or as a craft activity, but one of the major reasons is because they are peanut free.  We don’t have a peanut allergy in our family, but I know several families that do and this is a bird feeder project that doesn’t use PB!    I think they’d be great for a classroom party too!

This project is quick, easy and environmentally groovy…  It’s also pretty inexpensive, which is always a plus!  It is a heart shaped bird feeder!  The boys had a lot of fun making these and they took us a total of 20 minutes to toss together…  and they are PEANUT FREE!

Here’s the scoop:

  • 3/4 cup flour
  • 1/2 cup water
  • 1 envelope unflavored gelatin (2.5 teaspoons)
  • 3 tbsp corn syrup
  • 4 cups birdseed

You will also need:

  • large mixing bowl
  • heart shaped cookie cutter
  • nonstick spray
  • straw for making a hole in the ornament
  • parchment or wax paper or tin foil
  • cookie sheet
  • ribbon

Mix flour, water, gelatin and corn syrup. Add birdseed and stir until combine!

Spray the inside of a heart cookie cutter with cooking spray. You could use any shape you want really, but for Valentine’s Day a heart is perfect!

Place cookie cutter on a parchment lined cookie sheet. Spoon mixture inside of cookie cutter, pressing mixture firmly.  The birdseed stuck to my fingers a bit, but if you grease them that wouldn’t happen.   The more you press it down, the less shedding of seeds you will have.  We filled our cookie cutters to the brim!  Once they are full, take your straw and poke a hole in the top for the ribbon.  Make sure the straw goes all the way through to the pan.  Carefully lift the cookie cutter up.  It slides right off… Place it next to your heart and make another one!

This recipe made 13 hearts for us, perfect for gifts!  You will want to let them dry 6-8 hours.  We made ours in the afternoon and before bed I flipped them on their side to make sure the back side dried, as well.   We then just let them sit until the morning.  They were very solid by that time and it was simple to thread the ribbon through them at that time.

I think these would be adorable with little “Happy Valentine’s Day” tags… Maybe something like “glad you’re my love bird” or something cheesy like that :).  Have fun with it!  We are planning to pass them out to our neighbors too, you can make tons in a short period of time, so spread the LOVE!

White Chicken Chili

I’ve posted this recipe in the past, but it is one of our family favorites.   I figured with playoff football in full swing it might be a recipe you want to add to the mix!  It’s pretty easy and always gets lots of compliments…  Here’s the scoop:

4 boneless chicken breasts, cooked (I either bake or saute them in garlic)

6 cloves of garlic

1 medium onion

2 fresh jalapeno peppers, seeded and chopped

3 cans Great Northern Beans

2 T olive oil

3 cans (14.5 ounces each) chicken broth

1.5 t ground cumin OR half a package of fajita seasoning

1/2 cup lime juice

2 T cornstarch

2 T cold water

1.  Chop onion, garlic and jalapeno peppers, saute in Olive Oil

2.  Drain 1 can of beans and rinse well.  Using the bottom of a drinking glass, mash the beans and set aside

3.  Drain the remaining 2 cans of beans and rinse well, DO NOT MASH… set aside

4.  Combine the pepper/onion/garlic mixture with the chicken, mashed beans, whole beans, chicken broth, seasoning, and lime juice.  Bring this to a boil. Reduce heat and simmer 25 minutes.

5.  Combine cornstarch and water, stirring until smooth.  Add cornstarch mixture to chili and continue to cook until thickens, stirring constantly.

6.  Serve warm with cut up avocado, snipped cilantro, shredded cheese, green onions, corn bread, crackers, etc..

French Toast Breakfast Bake

Last year, I wanted to make something a little different for Christmas Brunch, so I relied on my friends at the Food Network to help me out.  I found a recipe for French Toast Casserole and happened to have most of the ingredients so I quickly went to work… I promise you that this took me a very short time to make. You need to make the first part the night before so it can “set up” this portion took me 10 minutes.   The next day you make a quick topping (5 minutes), spread it on the bread, and bake it.  I made a few changes to the original recipe and it turned out fantastic….  Here are the details:

Ingredients:

1 loaf of french bread (I used italian loaf, but sour dough would work too)

Butter or PAM for pan

8 eggs

2 cups half and half (I used heavy cream because that is what I had)

1 cup milk

2 Tablespoons sugar

1 Tablespoon vanilla

1/2 teaspoon cinnamon

1/2 teaspooon nutmeg

dash of salt

Praline Topping (recipe below)

Directions, DAY 1:

Slice  bread into 1 inch thick slices.  Arrange slices in a generously buttered or sprayed 9×13 inch pan, overlapping the slices.  In a large bowl, combine the eggs, half and half/cream, milk, sugar, vanilla, cinnamon, nutmeg and salt.  Beat until blended but not too bubbly.  Pour the mixture over the bread slices, making sure all are covered evenly with the milk-egg mixture.  Cover with foil and REFRIGERATE OVERNIGHT…

THE NEXT MORNING:

Preheat the oven to 350, Make the Praline Topping

Combine the following ingredients in a bowl and blend well:

2 sticks of butter

1 cup packed light brown sugar

1 cup chopped nuts (I used pecans)

2 Tablespoons light corn syrup

1/2 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

SPREAD THIS TOPPING OVER YOUR CASSEROLE…

Bake the casserole for 45 minutes until puffy and light golden brown.  I served mine with maple syrup, carmel sauce and also made a quick strawberry syrup by combining a cup of strawberry jam with a 1/4 cup of apple juice over low heat just until it was warm.  I would also serve it with whipped cream, powdered sugar and fresh berries if you have them around.    YUMMY…

Handprint Santa

HO HO HO…  These Santa’s are super cute and super easy to make!  You could make them on folded construction paper as a holiday card…. You could make them and laminate them as an ornament….   You can make them and hang them on your fridge or door to your garage… What ever you choose, they are simply adorable…

Step 1:  I use Green or Blue construction paper size 9×11, but you choose!

Step 2:  I used a paint brush and painted my little guys hands with white tempera paint which makes them giggle and I just love that sound!

Step 3:  Carefully stamp their hand on the construction paper

Step 4:  Draw and cut out a santa hat from red paper…  Depending on the age of your children you can do this for them or they can do it themselves.  Let them glue it on….

Step 5:  I used cotton balls and let them dip it in the paint to decorate their hats.  If you prefer you could let them glue cotton to the tip of the had and also to the rim.

Step 6:  Draw or glue on eyes, nose, mouth and cheeks.  I used eye stickers, but they could easily cut them out of paper, draw them with markers or even glue on googlies.

Cowboy Birthday Party- Yee Haw!

Shaeffer had his 6th Birthday Party on Saturday.  Living in Colorado brings out the best “COWBOY” in all of us, so we went with it!

DSC_4635-1We won this adorable package at our Young Life Auction this past summer and now was the perfect time to use it.  It included invitations, thank you cards, cupcake liners, cupcake toppers, a centerpiece and gift bags!  Thank you “Kids Cottage” in Edwards, CO for this amazing gift!  It made our party so much more western :).  If you are interested in these items they are made by Meri Meri and they are available at Amazon.

I love to give out books as my partying gifts at our birthday parties.  They cost about the same as filling a bag with trinkets that break and/or get thrown away with in the week, but books LAST!  This party had three different cowboy books to choose from!  I ordered the books from Amazon of course :).

Ben and my father in law made these AMAZING marshmallow shooters out of PVC pipes.  They followed an online tutorial similar to this one (click here) and I promise you they were the HIT of the party…  We tried setting up targets for them to shoot at, but lets be honest -the marshmallows ended up being shot at each other…  Don’t worry, they are not powerful enough for poking out an eye :).  SO FUN… SO SO FUN!

I knew I wanted to make “WANTED POSTERS” for all of the guests, but I didn’t want to pay a fortune to buy them through a website.  Fortunately good ole’ Martha Stewart had a printable template right on her website (click here) that was quick and easy to use.  Ben took pictures of all the kids as they arrived to the party.  While they were watching “Toy Story” we printed them off, cut them out, and glued them on.  This was our second “partying” gift for each of our guests…  They turned out really adorable!

DSC_4749-1I always try to take a group shot at the party so we can use them for Thank You notes…  Of course we tried to have them give us their best “Cowboy” smile or lack of a smile :).

DSC_4668-1Here is our sweet sweet 6 year old wearing his groovy shirt from lilthreadzclothing.    When I asked him his favorite part of the party he told me he loved that his Kindergarten teacher, his 5th grade buddy, and all his friends were here with him.  Did I mention we have a very sweet boy?  Well We Do!  Happy Birthday Shaeffer K!  We Love You to Infinity and Beyond :).

Educational Gifts We Love!

We have lots of fun toys at our house and in my opinion playing is learning so I believe ALL of them are educational.  A few of them fit into modern day “school” curriculum, however, and tonight I was reminded just how much fun learning can be!  We have this game, “Sum Swamp” that we’ve had for a while, but really never played it.  Well this week we’ve been playing it like it’s going out of style and I can honestly say I LOVE IT.  I love watching my boys brains work…  You can just see their little wheels a turning while we play this game.  Our two year old even plays with us in his own little way- super cute!  Here are the details on this game and some of our other favorite “educational” toys…

Scrapbook Paper Turkey Craft

This morning the boys wanted to do another turkey craft.  I kid you not when I say we have an entire wall of turkey crafts :)… I’ll post a pic of the “Thanksgiving” wall on Facebook!  I see why they don’t want to eat turkey now :).

Here’s The Scoop:

This craft can be done with any kind of paper or even a paper plate if you want.  We just did scrapbook paper because it made them a little more colorful.  I’ve made these turkey’s before using construction paper in all different colors for the feathers- also very cute!  You could also just use white paper and let them color the body brown and decorate the feathers how ever they want!   Do what you can!

YOU’LL NEED:

* Scrapbook Paper, Construction Paper, Typing Paper

*Scissors

*Glue

*Google Eyes OR Black Marker/Crayon

*Tissue Paper or red paper for “waddle”

DIRECTIONS:

1.  Cut out a circle shape for the body… I trace an ice cream bucket lid :).

2.  Cut out a beak and feet…  Older kids can do this on their own…

3.  Cut strips of paper for the feathers.  I cut about 1 inch strips…

4.  Roll the strips of paper around a pencil or your finger.  Once you/your kids get a hang of it you won’t need the pencil!  My boys had a blast rolling and re-rolling and re-re- rolling…

5.  Glue him all together!
